Tuesdays with Dorie: Brown Butter and Vanilla Bean Weekend Cake

I have been away for a while from Tuesdays with Dorie (TWD) and from baking. This is partly because I was away for a family trip during the year end and also partly because my weekends have been a little busy with a personal project which I am embarking on. It is going to be interesting how it takes off.

I did however manage to squeeze in making this cake – I got lured in by the fact that it is called a weekend cake and the recipe did look fairly simple. How did it / I fare?

Brown Butter and Vanilla Bean Weekend Cake


It was interesting that no hand mixer / stand mixer was require for the recipe. Also interesting was the addition of the butter… How was this cake going to rise? Usually, the ingredients are beaten together to incorporate some air into the mixture so that the crumb will be light.

The crumb of this cake was very close. I am not at all sure whether this was the intended result as there were no pictures for this recipe. I was not a fan of the crumb. Everyone who did try it liked the flavour but the crumb sort of threw them off. The taste did improve after a day or two though.

Do have a go at the recipe (which you can find on page 6 of Baking Chez Moi) as I am by no means a baking guru. Do also have a look through the other TWD bakers attempts (for I am sure most of them have fared better than I).

    I actually loved this cake…flavor and crumb! The cake did have baking powder, and eggs which help the cake to rise! Yours does look lovely!

    I’m trying to get back into more regular posting with TwD, too! Your cake looks wonderful—I found the texture more like a pound cake and enjoyed it very much 🙂

    I think your cake turned out well; it did have a dense crumb and was quite sturdy. Texture wasn’t a hit here either but it had great flavour.

    I loved the crumb and flavour of this cake, but I thought of it as more of a sponge-like cake than a quick bread. I’m glad you found enough down time to bake with us.
